Ingredients:

  • 1/2 cup dry barley
  • 1/4 cup butter
  • 1 medium onion, chopped
  • 1 (12 oz) can chicken broth
  • 1 (8 oz) can mushrooms, sliced
  • 1/2-3/4 cup french-fried onions
  • 1/2 cup slivered almonds

Directions:

  1. Melt butter in skillet. Brown barley and onion in butter. When golden brown, place in a casserole dish with broth, mushrooms slices (including water) and almonds.
  2. Cover, bake about 1 hour. Before serving, sprinkle with French fried onions and recover. Let let for 5 minutes before serving.
