Ingredients:

  • 2 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup soy flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup butter
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup walnuts

Directions:

  1. Combine all ingredients except walnuts in large bowl. Beat for 3 mintues, using electric mixer at low speed, scraping bowl occasionally. Stir in walnuts.
  2. Drop mixture by heaping teaspoonfuls about 2 inches apart on greased baking sheet.
  3. Bake in 375°F oven for 10 minutes.
