Ingredients:

Directions:

  1. Preheat broiler: place eggplant in a single layer on a baking sheet and spray with nonstick baking spray
  2. Broil until well browned, about 4 minutes
  3. Turn over, repeat on on other side
  4. Remove from oven and reduce oven temp to 375*F
  5. Spread 1 cup marinara in an 11 x14 baking dish
  6. Add eggplant rounds overlapping slightly
  7. Top with remaining sauce, basil leaves, then cheese
  8. Bake until cheese begins to brown, ~ 20 minutes
  9. Let stand 10 minutes to thicken before cutting
