Apple Raisin Nut Bread

Ingredients:

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 1/2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 cup raisins
  • 1 cup shredded fresh apples (2 medium size)

Directions:

  1. Combine eggs, oil, flour, sugar, cinnamon, baking soda, vanilla,
  2. Salt,& baking powder in large mixing bowl. Stir until
  3. Well blended
  4. Stir in nuts, raisins,& apples until a rather stiff batter is formed
  5. Mix until all ingredents are throughly blended, but do not overbeat
  6. Pour into a greased 81/2-by-41/2 inch loaf pan
  7. Bake 375 for 1 hr. or until a tester inserted in the center
  8. Comes out clean
