Ingredients:

  • 2 large zucchini
  • 2 eggs
  • 2 tbsp finely chopped parsley
  • 1 tsp salt
  • 1/4-1/2 tsp pepper
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1/4 cup salad oil

Directions:

  1. In a shallow bowl, combine 3/4 cup of cheese,eggs, flour,parsley, salt, pepper, garlic and milk.
  2. With a whisk or electric mixer, beat until smooth.
  3. Cover and refrigerate for 20 minutes.
  4. Cut zucchini in half crosswise, then into lengthwise slices about 1/4-inch thick.
  5. Lightly dust each piece with flour.
  6. Heat oil in a frying pan over medium heat.
  7. Using a fork, dip each zucchini slice into cheese mixture, thickly coating each side.
  8. Place in pan a few pieces at a time, and cook, turning once, until golden brown on both sides.
  9. Drain on paper towels and then transfer to serving plate and keep warm until all are cooked.
  10. Sprinkle with remaining parmesan cheese and serve.
