Whipped Sweet Potatoes with Honey and Orange

  1. In a bowl, combine brown sugar, butter, honey, orange peel, orange juice, cinnamon, allspice and salt in a bowl. Set aside. In a large skillet, combine the potatoes and enough water to cover them. Bring to a boil, reduce heat and cook for 8 minutes or until tender. Drain the water and return the potatoes to the skillet and stir in brown sugar mixture. Simmer for 5 to 6 minutes. Transfer mixture to a large bowl and whip or mash to desired consistency. If mashing, you can leave them in the skillet. I hand mash and then run an emersion blender through the potatoes a few times. Serve immediately, or cover and refrigerate to serve later. Rewarm over medium/low heat, stirring often or in a covered serving/casserole dish in a 350 degree oven for 2030 minutes.
