Ingredients:

Directions:

  1. Heat oil in large skillet.
  2. Add eggplant, zucchini, green pepper, and onions.
  3. Cook until barely tender.
  4. Layer 1/2 of vegetables, cheese, and sauce in greased baking dish, seasoning layers with salt, pepper, and oregano.
  5. Repeat.
  6. Sprinkle with grated sharp cheese.
  7. Bake at 350°F for 20-30 minutes, or until cheese is melted.
