Unwised Chocolate Pudding

Ingredients:

  • 1 (12.3-oz) block mori-nu lite silken tofu
  • 1/4 cup brown sugar
  • 1/2 tbsp vanilla
  • 1/3 cup cocoa powder
  • 2/3 cup splenda
  • 1/4 tsp sea salt
  • 1/3 cup cold coffee

Directions:

  1. In a food processor, combine tofu, sugar, and vanilla. Puree until smooth, scraping the processor sides as necessary.
  2. Whisk together cocoa, Splenda and salt, then add to the food processor.
  3. Pour in the Almond Breeze and coffee.
  4. Puree again until smooth and velvety.
  5. Chill before serving.
