Ingredients:

Directions:

  1. In a large bowl, combine turkey, onions, 1 1/2 cups of the breadcrumbs, salt, pepper, tarragon, sage, Worcestershire sauce, and egg.
  2. Fold in the mashed potatoes, and then add just enough stock to bind the mixture into balls (about 2-3 inch each).
  3. Roll each ball in the remaining bread crumbs, and place on an ungreased cookie sheet.
  4. (At this point you may freeze them for a later day).
  5. Bake at 350°F for 25-30 minutes.
  6. Makes about 16 croquettes.
  7. Serve with gravy, if desired.
