Ingredients:

  • 2 eggs
  • 1 &1/2 cups all-purpose flour
  • 1 &1/2 cups milk
  • 1/4 cup butter,melted
  • 1 tbsp (plus)1&1/2 tsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 (15 oz) jar chunky applesauce

Directions:

  1. Arrange the bacon slices,over lapping slightly, in ungreased
  2. 13x9x2 inch baking dish
  3. Pour maple syrup over bacon
  4. Beat eggs in bowl until foamy
  5. Beat in remaining ingredients just until smooth,(Do not include the Applesauce at this point)
  6. Pour mixture over bacon and syrup
  7. Bake uncovered in a 400 degree oven until golden brown and firm
  8. 20 to 25 minutes
  9. Cut pancakes into 8 pieces and invert on serving plates
  10. Serve with heated applesauce
  11. Enjoy
