Ingredients:

Directions:

  1. In a large pot or Wok heat up the butter / oil and add the onions and garlic.
  2. Cook until the onion turns transparent
  3. Add the sliced carrots and celery, cook for 5 minutes on a medium heat
  4. Add the tomatoes and paprika, cook until reduced and the tomatoes are mushy.
  5. Pour into a liquidiser or food processor and process until the soup is smooth in texture. (Or sieve the soup to remove the solids if you don't have a food processor / liquidiser)
  6. Pour back into the pan / wok
  7. On a lower heat, cover and simmer for 15 minutes.
  8. Add Chicken / Vegetable stock and Basil
  9. Cover and simmer for 45 minutes.
  10. When ready to serve add the vodka and serve immediately.
  11. If freezing the soup, do NOT add the vodka !
  12. Decorate with 1 teaspoon of sour cream (Optional)
  13. ENJOY !
