Tinks -sugar Crusted - Lime  Cake

Ingredients:

  • 2- egg whites, at room temp .............
  • 1/2- tsp baking powder
  • 3/4- cup sugar
  • 1 1/2 tbsp grated limes peel
  • 1/4- tsp salt
  • 1/3- cup milk
  • 1/4- cup shortening
  • topping.................
  • 1/4- cup sugar

Directions:

  1. Preheat oven to 350 degrees f ..............
  2. Spray a round 9 inch cake pan with non stick cooking spray...........sprinkle lightly with a little flour.........................
  3. In a small bowl , combine egg whites and 1/2 teaspoon baking powder; beat until stiff peaks form ..........set aside ...............
  4. In a large bowl, combine all remaining cake ingredients, beat at medium low speed until moistened.........................
  5. Beat 2 minutes at medium speed....................
  6. Gently fold in the beaten egg whites into the batter...........
  7. Pour into the the prepared pan......................
  8. Bake at 350 degrees f... for 27 to 35 minutes or until toothpick ..inserted in center comes out clean ...you know the rule lol...............
  9. In a small bowl , combine topping ingredients , mix well...................
  10. Spread on hot cake evenly..........
  11. Cool for at least 45 minutes or longer until completely cooled before cutting ................
  12. 8 servings.................
