A quick easy cake to make but tastes delish........i changed it a bit to my liking and i used also key lime instead of lime juice i think it tastes better i love key lime!!!........ ive also tried this using a boughten sugar cookie crust and it was delicious too so you can do it either way. Ingredients:
2- egg whites, at room temp.............
1/2- teaspoon baking powder
1- cup- all-purpose flour
3/4- cup sugar
1 1/2 tablespoon grated limes peel
1- teaspoon baking powder
1/4- teaspoon salt
1/3- cup milk
1/4- cup shortening
2- tablespoons key lime juice
topping.................
1/4- cup sugar
1- tablespoon key lime juice
Directions:
1. Preheat oven to 350 degrees f ..............
2. spray a round 9 inch cake pan with non stick cooking spray...........sprinkle lightly with a little flour.........................
3. in a small bowl , combine egg whites and 1/2 teaspoon baking powder; beat until stiff peaks form ..........set aside ...............
4. in a large bowl, combine all remaining cake ingredients, beat at medium low speed until moistened.........................
5. beat 2 minutes at medium speed....................
6. gently fold in the beaten egg whites into the batter...........
7. pour into the the prepared pan......................
8. bake at 350 degrees f... for 27 to 35 minutes or until toothpick ..inserted in center comes out clean ...you know the rule lol...............
9. in a small bowl , combine topping ingredients , mix well...................
10. spread on hot cake evenly..........
11. cool for at least 45 minutes or longer until completely cooled before cutting ................
12. 8 servings.................
