Sweet Freezer Pickles

Ingredients:

  • 3 cups thinly sliced onions
  • 2 cups sugar
  • 1 tsp salt
  • 7 cups cucumbers , slices (medium slices)

Directions:

  1. Combine cider vinegar, sugar, salt, mustard seeds and celery seeds in a saucepan.
  2. Heat, stirring constantly, until sugar is dissolved and the mixture is just at the boiling point.
  3. Set aside to cool slightly.
  4. Meanwhile, peel and slice cucumbers and onions and combine in a large, non-reactive bowl.
  5. Pour vinegar mixture over cucumber mixture and stir well to coat.
  6. Refrigerate about 12 hours and then pack in freezer containers.
  7. (The refrigeration time is included in the cooking time.).
