Swedish Red Cabbage

Ingredients:

  • 2 cloves garlic
  • 1 medium onion, sweet
  • 2 large apples
  • 2 tbsp bacon fat
  • 1 tsp salt
  • 1/2 cup sugar
  • 1 cup vinegar
  • 1 1/2 cups water
  • 4 tbsp cornstarch

Directions:

  1. Remove heads from cloves, wash, core, and slice cabbage.
  2. Cut up onion Pare and slice apples.
  3. Combine cloves, cabbage, onion, apples, bacon fat, salt, sugar, vinegar, water, bay leaves, allspice, and peppercorns in a large sauce pan.
  4. Cover.
  5. Simmer for 1 hour and 30 min
  6. Make a paste of cornstarch and equal amounts of water.
  7. Stir into cabbage mixture.
  8. Cook until thickened.
