On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share Ingredients:
2 cloves garlic |
1 medium head cabbage, red |
1 medium onion, sweet |
2 large apples |
2 tablespoons bacon fat |
1 teaspoon salt |
1/2 cup sugar |
1 cup vinegar |
1 1/2 cups water |
1 bay leaf |
2 whole allspice |
6 peppercorns |
4 tablespoons cornstarch |
Directions:
1. Remove heads from cloves, wash, core, and slice cabbage. 2. Cut up onion Pare and slice apples. 3. Combine cloves, cabbage, onion, apples, bacon fat, salt, sugar, vinegar, water, bay leaves, allspice, and peppercorns in a large sauce pan. 4. Cover. 5. Simmer for 1 hour and 30 min 6. Make a paste of cornstarch and equal amounts of water. 7. Stir into cabbage mixture. 8. Cook until thickened. |
