Ingredients:

  • 0,5 kg squid (i use both cleaned whole as the rings)
  • 4 cloves of garlic
  • 1/2 cup of olive oil estra vergine
  • 1 liter water
  • 3 medium sized potatoes

Directions:

  1. Cut the squid in inch long strips, quarter of an inch wide. Dice the potatoes. Finely chop the onions
  2. Add the onions to the oil that has been heated up in a big pot. Add the squid when most of the water has evaporated from the onions and add a dash of grappa. Let the squid cook for 5 minutes. Add the tomatoes, water and the spices. Cook for 2,5 - 4 hours - slowly. 20 minutes before the end add the potatoes. When the potatoes are ready mash them and add them to the soup as to thicken it. It is a house favorite - often I am asked to make more than needed as this soup gets better on ageing.
