Ingredients:

  • 1/2 cup brown sugar
  • 4 cups bran
  • 2 cups flour
  • 1 tsp salt
  • 2 tsp bicarbonate of soda disolved in 2 tbsp of water

Directions:

  1. Pre-heat oven to 180 degrees celcius.
  2. Prepare two bread tins 21x11x7 cm by smearing insides with butter or spraying it with cooking spray.
  3. Pour the boiling water over the brown sugar and stir until sugar is disolved.
  4. Add the bran and mix well - let the mix cool down.
  5. Mix the rest of the ingredients and add to the bran mix.
  6. Mix all the ingredients well and dish into the prepared bread tins.
  7. Bake 1 hour or untill cooked - as ovens are different I have found that I needed to bake the breads a bit longer. Use a skewer or test needle to make sure that the bread is cooked right through.
  8. Tip: After about 20 minutes cover the bread with aluminium foil to prevent it from baking too dark.
  9. Turn out the breads onto a cooling rack to cool down.
  10. Makes 2 small loaves
