Spicy Lentil and Kielbasa Soup

Ingredients:

  • 32 oz beef broth
  • 1 lb kielbasa
  • 1 cup lentils
  • 1 small onion
  • 4 garlic cloves
  • 1/2 tbsp horseradish
  • 1/4 tsp white pepper
  • 1/4 tsp clove (ground)
  • 1 small broccoli

Directions:

  1. Slice kielbasa into 1 inch pieces. Place them in a crockpot with the broth and lentils.
  2. Coarsely chop the onion. Dice the jalapeno. Add to the crockpot.
  3. Add garlic, nutmeg, peppercorns (tying them in cheesecloth makes them easier to find again to remove), and horseradish.
  4. Cook on low for 5 hours.
  5. Chop carrots and broccoli and add to soup. Cook another hour.These can be added at the beginning, but I like mine a bit firmer.
  6. Remove nutmeg and peppercorns. Serve.
