Ingredients:

Directions:

  1. Cook pasta in salted water. Reserve 1c cooking liquid and drain pasta.
  2. Meanwhile, spray sauté pan with cooking spray and heat pan over medium heat.
  3. Add onion and sauté until tender.
  4. Add garlic, zucchini, corn, coriander, beans, and ham (if using) to pan. Saute until vegetables are tender and ham is lightly browned.
  5. Toss pasta and vegetable mixture together with salsa, adding reserved cooking liquid to achieve desired consistency.
  6. Season with salt and pepper to taste. Garnish with queso fresco, if desired.
