Directions:

  1. Heat oven to 350 degrees. Wrap tortillas in heavy foil and heat in oven for 10 minutes. Meanwhile, combine salsa; combine tomato, cucumber, scallions, cilantro, lime juice and salt. Set aside.
  2. In a bowl toss beans with 1/2 tsp fajita seasoning. In another bowl toss shrimp with the remaining fajita seasoning. Heat oil in skillet over medium-high heat. Add beans and cook, stirring, 3 minutes. Add shrimp and cook another 3 minutes, or until shrimp are opaque.
  3. Assemble tacos, divide shrimp mixture between tortillas. Serve with salsa.
