Shrimp Tacos Ingredients:
8 corn tortillas medium, 6-inch diameter |
1 1/2 cups tomato, seeded and chopped |
1 cup cucumber, seeded and chopped |
1/3 cup scallions, thinnly slcied |
1/4 cup cilantro, chopped |
3 tbsp lime juice |
1/4 tsp salt |
8 oz green beans, trimmed |
1 tsp fajita seasoning |
1 lb shrimp, medium to large, peeled and deveined |
1 tbsp olive oil |
Directions:
1. Heat oven to 350 degrees. Wrap tortillas in heavy foil and heat in oven for 10 minutes. Meanwhile, combine salsa; combine tomato, cucumber, scallions, cilantro, lime juice and salt. Set aside. 2. In a bowl toss beans with 1/2 tsp fajita seasoning. In another bowl toss shrimp with the remaining fajita seasoning. Heat oil in skillet over medium-high heat. Add beans and cook, stirring, 3 minutes. Add shrimp and cook another 3 minutes, or until shrimp are opaque. 3. Assemble tacos, divide shrimp mixture between tortillas. Serve with salsa. |
