Sausage & Vegetable Cornbread Skillet

Ingredients:

Directions:

  1. Heat oven to 425 degrees.
  2. In cast iron or ovenproof skillet, cook sausage or beef and onion until browned;drain.
  3. Stir in tomatoes, mixed vegetables,broth, and thyme.
  4. Let simmer while preparing cornbread topping.
  5. In medium bowl, combine all cornbread topping ingredients.
  6. Stir until smooth.
  7. Spoon batter around edges of sauage mixture.
  8. Bake at 425 degrees for 25-30 minutes or until golden brown.
