Rosemary Roasted Sweet Potatoes And Onions

Ingredients:

Directions:

  1. Preheat oven to 425'.
  2. Coat 10 X 15 pan with non stick cooking spray.
  3. Cut sweet potatoes into 1 inch chunks.
  4. Place in large bowl and add oil. Toss well. Add rosemary, salt, paprika and pepper, if desired. Toss well. Add onion. Toss again.
  5. Spread vegetables in single layer on prepared pan.
  6. Bake 20-25 minutes or until very tender, stir after 10 minutes.
  7. Let stand 5 minutes before serving.
