Rosemary Roasted Sweet Potatoes And Onions |

A little different flavor for my friendly little sweet potatoes. Ingredients:
2 large, unpeeled sweet potatoes ( about 1 1/4 pound) |
2 tablespoons canola oil |
1 teaspoon rosemary (fresh is good) |
1/2 teaspoon salt |
1/2 teaspoon paprika, preferably smoked |
1/8 teaspoon ground red pepper or red pepper flakes ( optional ) |
1 medium sweet or yellow onion, cut into chunks |
Directions:
1. Preheat oven to 425'. 2. Coat 10 X 15 pan with non stick cooking spray. 3. Cut sweet potatoes into 1 inch chunks. 4. Place in large bowl and add oil. Toss well. Add rosemary, salt, paprika and pepper, if desired. Toss well. Add onion. Toss again. 5. Spread vegetables in single layer on prepared pan. 6. Bake 20-25 minutes or until very tender, stir after 10 minutes. 7. let stand 5 minutes before serving. |
