Raspeberry-Chocolate Muffins

Ingredients:

  • 1/4 cup baking cocoa
  • 2 eggs
  • 1 1/3 cup fiber 1 cereal
  • 1 cup flour
  • 1 cup milk
  • 2/3 cup raspberries
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/4 cup vegetable oil

Directions:

  1. Heat oven to 375 degrees.
  2. Grease only bottoms of muffin cups.
  3. Crush cereal and combine with milk. Let stand 5 min. Stir in oil and eggs. Stir in flour, sugar, cocoa, baking powder, and salt til moist. Gently stir in raspberries.
  4. Pour into muffin cups (12). Bake 20-25 min or til toothpick comes out clean. Immediately remove from pan. Drizzle with favorite powdered sugar glaze if desired.
