Pumpkin Spice Coffee Cake

Ingredients:

  • 1 package. of spice cake mix
  • 3 eggs
  • 1 cup libby''s 100% pumpkin
  • 1/3 cup vegetable oil
  • 1/2 cup margarine
  • 1/2 cup shortening
  • 1/8 tsp. salt
  • 5 cups of confectioner''s sugar
  • 1/4 cup of milk

Directions:

  1. Pre-heat oven to 350 F.
  2. Combine cake mix, eggs, pumpkin, evaporated milk and vegetable oil in a large mixing bowl. Beat at low speed until moistened.
  3. Beat at medium speed for two minutes; stir in the morsels. Pour into a well greased and floured bunt cake pan.
  4. Bake for 40-45 minutes or until a wooden toothpick is inserted into the center and comes out clean. Cool on a wire rack for 25 minutes.
  5. Frosting:
  6. In a large bowl, cream margarine and shortening until light and fluffy.
  7. Add salt, vanilla and confectioner’s sugar and milk. Beat well.
