I love spice cake, I even had it at my wedding! lol Anyway, this cake takes me back all those years ago to my special day. I know I got this recipe from somewhere off of the net but I don't remember where. I hope you all enjoy it! Read more ! Ingredients:
1 pkg. of spice cake mix |
3 eggs |
1 cup libby’s 100% pumpkin |
2/3 cup evaporated milk |
1/3 cup vegetable oil |
1 cup white chocolate morsels |
butter cream frosting |
1/2 cup margarine |
1/2 cup shortening |
1/8 tsp. salt |
1 1/2 vanilla extract |
5 cups of confectioner’s sugar |
1/4 cup of milk |
Directions:
1. Pre-heat oven to 350 F. 2. Combine cake mix, eggs, pumpkin, evaporated milk and vegetable oil in a large mixing bowl. Beat at low speed until moistened. 3. Beat at medium speed for two minutes; stir in the morsels. Pour into a well greased and floured bunt cake pan. 4. Bake for 40-45 minutes or until a wooden toothpick is inserted into the center and comes out clean. Cool on a wire rack for 25 minutes. 5. Frosting: 6. In a large bowl, cream margarine and shortening until light and fluffy. 7. Add salt, vanilla and confectioner’s sugar and milk. Beat well. |
