Ingredients:

  • 1/2 cup sugar
  • 4 tbsp cornstarch
  • 1 egg
  • 3 cups skim milk
  • 2 tsp vanilla

Directions:

  1. Mix sugar, corn starch and egg together in microwave safe container. (I use the glass Pampered Chef 8 cup batter bowl, with the handle on the side.) Pour in the milk; mix together with a wire whip. Microwave on power level 8 for 8-10 minutes (times will vary). STIR EVERY 1 1/2 MINUTES with a wire whip. Continue microwaving until pudding gets thick. Add the vanilla at this point.
  2. CHOCOLATE PUDDING: Add 2 tablespoons baking cocoa with the sugar/egg/corn starch mixture. Omit the vanilla.
  3. We like to put peanut butter crumbs on the top of each serving bowl. (Put some peanut butter in a bowl, add powdered sugar and work it together with a fork until crumbs form.).
  4. A little whipped topping is nice also. :).
