Ingredients:

Directions:

  1. Combine first 3 ingredients in a bowl, stirring with a whisk.
  2. Place peanut oil, curry powder, and chicken in a bowl, toss to coat.
  3. Thread chicken onto 8 (6 inch) skewers.
  4. Heat a grilling pan over medium-high heat, and coat with cooking spray.
  5. Add chicken to pan, cook 4 minutes on each side, or until chicken is done.
  6. While chicken cooks, combine pineapple, red onion, cilsntro, lime juice, and red pepper.
  7. Serve chicken with soy sauce mixture, and pineapple mixture.
