Ingredients:

  • 1 1/2 lbs almond paste
  • 1 1/2 cups sugar
  • 1 cup confectioners' sugar
  • 2 cups pine nuts

Directions:

  1. Preheat oven to 350.
  2. In an electric mixer, combine almond paste that has been broken into pebble size pieces), sugar, confectioners' sugar and egg whites on low until blended. Mix for 2 minutes on medium. This will make a sticky dough. Don't add flour - the dough needs to be slightly sticky so that the pine nuts stick to the dough.
  3. Roll dough into 1 inch balls. Roll balls in a bowl of pine nuts. Place the cookies on a cookie sheet either lined with parchment or lightly sprayed, spacing them 2 inches apart. Using your fingers, slightly flatten the tops of the cookies.
  4. Bake for 15 - 20 minutes or until light golden brown. Remove the cookie sheet from oven and let cookies cool on sheet (easier to remove) When cookies are completely cool, loosen then with a metal spatula. Store in an airtight container.
