Peruvian Beef Kabobs with Pepper Sauce

Ingredients:

Directions:

  1. To make beef, combine all beef ingredients in a bowl.
  2. Toss well.
  3. Cover and chill to marinate for 3 hrs.
  4. Combine rub ingredients.
  5. Prepare grill.
  6. Place beef on metal skewers.
  7. Rub the rub all over the meat.
  8. Grill for 6 min.
  9. Turning over one time.
  10. Alternately, you could broil the meat in the oven.
  11. Just make sure it is done enough for your tastes.
  12. To make pepper sauce, broil the pepper halves until they begin to blacken.
  13. This should take about 15 minutes.
  14. Place them in a ziplock bag (a sturdy one that won't melt) and seal it.
  15. This will let the skins come loose.
  16. Peel the skins off and chop up the pepper.
  17. Put the pepper chunks and remaining sauce ingredients in a blender and grind up until smooth.
