Peanut Butter Praline Pie

Ingredients:

  • 1 1/2 cups vanilla wafer crumbs (about 40 wafers)
  • 6 tbsp baking cocoa
  • 1/3 cup confectioners' sugar
  • 1/4 cup packed brown sugar
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1/3 cup butter, cubed
  • 2 tbsp water
  • 2 cups milk
  • 1 (11 oz) package peanut butter chips
  • 1 cup whipped topping

Directions:

  1. In a bowl, combine crumbs, cocoa and confectioners' sugar.
  2. Stir in butter.
  3. Press into a 9 inch pie plate.
  4. Bake at 350 degrees for 10 minutes.
  5. Cool on a wire rack.
  6. In a saucepan, combine the sugars and cornstarch.
  7. Add butter and water.
  8. Bring to a boil over medium heat.
  9. Cook and stir for 1 minute.
  10. Stir in pecans.
  11. Pour into crust.
  12. Refrigerate.
  13. Meanwhile, in a saucepan, combine pudding mix and milk until smooth.
  14. Cook and stir over medium heat until mixture comes to a boil.
  15. Remove from the heat.
  16. Stir in peanut butter chips until smooth.
  17. Cover and refrigerate for 1 hour.
  18. Fold in whipped topping.
  19. Spoon over praline layer.
  20. Refrigerate until set.
  21. Garnish with pecans and aditional whipped topping.
