Peanut Butter And Banana Cookies

Ingredients:

  • 1 egg white ; whipped (next time i'm gonna try 1 or two whole eggs, i didn'tsp see the benefit of using a whipped )
  • 1/2 cup peanut butter (i used almond butter and the nutty flavor did not come through)
  • 1 1/2 cup unbleached flour
  • 1/2 cup brown sugar ; packed

Directions:

  1. Preheat oven at 375. Prepare a baking sheet with cooking spray. In a mixing bowl, combine margarine, bananas, egg white, and vanilla. In another mixing bowl, combine flour, sugars, and baking soda. Mix wet ingredients with dry ingredients just until moistened. Drop by tablespoons 2 apart onto prepared baking sheet. Bake about 12 minutes or until lightly browned.
