Peachy Cream Cheese Pie

Ingredients:

Directions:

  1. Crust:
  2. In a med. bowl stir together wafer crumbs, ground walnuts, and 1 Tbsp. sugar., add melted butter.
  3. Toss to mix well.
  4. Spread the mixture evenly into a 9-in. glass ( or microsafe) pie plate.
  5. Press onto bottom and up sides of pie plate.
  6. Micro-cook on 100% for 2 mins. or till set.
  7. (OR, my choice: bake in oven, 375* for 4-5 mins or till edges are light brown)
  8. Cool completely on a wire rack.

  10. Pie:
  11. In a medium bowl, beat cream cheese, 1/4 c. sugar, and orange juice concentrate with an electric mixer on med. till smooth.
  12. Fold in whipped topping.
  13. Spread over cooled crust.
  14. Cover surface with plastic wrap and chill at least 1 hour.
  15. Just before serving, arrange peach slices over filling.

  17. In a small saucepan, heat and stir the orange marmalade just till melted, brush onto peaches.
  18. Can garnish with raspberries, if you wish.
