This peachy creamy pie will earn RAVES- but, you must use FRESH, RIPE peaches! It is a very favorite of ours. I was wanting to wait to post it until I took a picture since it is a beautiful dessert, but the peaches are in now! Read more ! So here goes... Remember, this is only amazing if you use ripe peaches! Ingredients:

1/4 c vanilla wafers crumbs( about 17) |
2/3 c. toasted ground walnuts |
1 tbsp. sugar |
5 tbsp. butter, melted |

1 8 oz. pkg. light cream cheese (neufchatel), softened |
1/4 c. sugar |
2 tbsp. frozen orange juice concentrate, thawed |
1 c. frozen whipped topping, thawed |
3 c. peeled, sliced peaches |
1/3 c. orange marmalade |
Directions:
1. Crust: 2. In a med. bowl stir together wafer crumbs, ground walnuts, and 1 Tbsp. sugar., add melted butter. 3. Toss to mix well. 4. Spread the mixture evenly into a 9-in. glass ( or microsafe) pie plate. 5. Press onto bottom and up sides of pie plate. 6. Micro-cook on 100% for 2 mins. or till set. 7. (OR, my choice: bake in oven, 375* for 4-5 mins or till edges are light brown) 8. Cool completely on a wire rack. 9. _____________________ 10. Pie: 11. In a medium bowl, beat cream cheese, 1/4 c. sugar, and orange juice concentrate with an electric mixer on med. till smooth. 12. Fold in whipped topping. 13. Spread over cooled crust. 14. Cover surface with plastic wrap and chill at least 1 hour. 15. Just before serving, arrange peach slices over filling. 16. _____________________ 17. In a small saucepan, heat and stir the orange marmalade just till melted, brush onto peaches. 18. Can garnish with raspberries, if you wish. |
