Orange Marmalade Candied Carrots

Ingredients:

  • 2 lb of baby carrots
  • 2 tbsp brown sugar
  • 2 tbsp butter
  • 3 tbsp orange juice
  • 1/2 cup coarsley chopped toasted pecans

Directions:

  1. Steam carrots for 10 minutes or until crisp-tender
  2. Transfer carrots to serving bowl
  3. Add 2/3 cup orange marmalade, stirring gently until orange marmalade melts
  4. Combine brown sugar,butter in a microwaveable dish and cook until brown sugar melts.
  5. Stir in pecans and pour over carrot mixture, tossing gently to coat
  6. Serve with a slotted spoon.
