Ingredients:

  • melt some butter in a frying pan,then turn down the heat to low or medium low.
  • do not add any salt as the salt breaks down the albumen content and spoils the omelette.
  • beat the eggs with an egg beater or pastry whip,and without 1 pause in the beating,pour into your frying pan.
  • getting them into the pan as quickly as possible, so as not to separate, even slightly.
  • cook slowly.
  • turn if desired,then salt and pepper to taste when served.
