Not What You Think Sweet Potatoes In Iron Skillet

Ingredients:

Directions:

  1. Peel and slice sweet potatoes crosswise, about 1/2 inch thick
  2. Heat skillet with about 1/2 inch oil
  3. Layer sweet potatoes one a time in the skillet to fry light brown, turning as needed, and sprinkling with a little salt
  4. Fry a few minutes, THEN
  5. Remove to bowl
  6. Pour off excess oil
  7. Melt one stick butter in iron skillet and add 1 cup brown sugar
  8. Return sweet potatoes to skillet, keep turning them gently until done and making sure they are coated well with sugar and butter
  9. You can test to see if they are done
  10. NOTE: For SAVORY SWEET POTATOES, fry in 1/4 inch oil, and a little olive oil. Omit the sugar, but add the butter. Cook covered. Add cumin, black pepper, or a little rosemary, and even some carmelized onions!
