My Moms Pumpkin Cookies

Ingredients:

  • 1 cup shortening
  • 2 cups white sugar
  • 2 cups pumpkin
  • 2 eggs
  • 4 cups flour
  • 2 tsp. baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1 cup chocolate chips (optional)
  • 1 cup chopped walnuts (optional)

Directions:

  1. Cream shortening and sugar.
  2. Add eggs and pumpkin.
  3. Combine dry ingredients.
  4. Add to shortening and sugar mixture.
  5. Mix well.
  6. Add chocolate chips and walnuts (If you want them), mix well.
  7. Drop by teaspoonful onto greased cookie sheet.
  8. Bake at 350 degrees for 12-15 minutes.
  9. Do not overbake.
  10. Enjoy!
  11. These are fantastic when covered in My Mom's Sticky Frosting!
  12. They'd also be good with cream cheese frosting.
