My Baked Potato Soup

Ingredients:

Directions:

  1. Cook bacon and set aside.
  2. Cook onions in bacon drippings until transparent.
  3. Add flour, whisking, and cook 3 to 5 minutes until it starts to turn golden.
  4. Add chicken broth, gradually whisking until mixture thickens.
  5. Reduce heat to simmer and add potatoes, cream, bacon, parsley, and seasonings. Simmer for 10 minutes. Don't boil.
  6. Add grated cheese and scallions. Heat until cheese melts completely. Garnish with bacon, cheese, and parsley.
