OK, you want comfort food, this is it, Creamy cheesy, baked potatoes like you never dreamed of before! A dear friend gave me this recipe years ago! Ingredients:

8 slices bacon with drippings retained. |
1 cup yellow onion, diced |
2/3 cup flour |
6 cups hot chicken broth |
5 largepotatoes, baked, peeled, and diced |
2 cups half & half |
1/4 cup fresh parsley, chopped |
1 1/2 tsp. garlic |
1 1/2 tsp. basil (dried) |
1 tsp. salt |
1 tsp. black pepper |
1 tsp. cholula sauce or tabasco or favorite hot sauce |
1 cup grated cheddar cheese (i use sharp) |
1/4 cup scallions, diced |
Directions:
1. Cook bacon and set aside. 2. Cook onions in bacon drippings until transparent. 3. Add flour, whisking, and cook 3 to 5 minutes until it starts to turn golden. 4. Add chicken broth, gradually whisking until mixture thickens. 5. Reduce heat to simmer and add potatoes, cream, bacon, parsley, and seasonings. Simmer for 10 minutes. Don't boil. 6. Add grated cheese and scallions. Heat until cheese melts completely. Garnish with bacon, cheese, and parsley. |
