Ingredients:

Directions:

  1. In pot add chopped bacon, cook to render fat.
  2. Add onions, garlic and celery, stir until softened.
  3. Add mushrooms, cook until brown, 15 minutes.
  4. Deglaze pan with cognac, add wine and reduce.
  5. Add broth and simmer 30 minutes.
  6. Puree mixture with hand blender or pour into blender in batches.
  7. Return to heat, add cream, salt, pepper, do not boil.
