Ingredients:

Directions:

  1. Pre-heat oven to 200C / 180C Fan or Gas mark 6.
  2. Perepare a greased baking sheet/tray.
  3. Whisk the egg white in a bowl until stiff.
  4. Sprinkle over icing sugar tbsp at a time whisking well with each addition until you have a glossy mixture.
  5. Fold desiccated coconut into mixture in 2 parts.
  6. Spoon 1/2 teaspoon of mixture on the baking sheet spacing them slightly apart.
  7. Using a wet teaspoon handle make a little cavity in the centre of each macaroon.
  8. Place a small drop of jam in the centre.
  9. Bake for 8-10 minutes until golden brown at the tips.
  10. Leace to cool and then dust with icing sugar.
  11. To remove from baking sheet loosen with a flat spatula.
