Lowfat Light As Air Peppermint Mernigues

Ingredients:

  • 1/2 tsp vanilla
  • 2/3 cup sugar
  • 1/4 cup finely crushed peppermint candy

Directions:

  1. Place egg whites in a mixing bowl and let sit for 1 hour.
  2. Add vanilla and cream of tartar to egg whites.
  3. Beat with an electric mixer until soft peaks form.
  4. Add sugar 1 tablespoon at a time.
  5. Beat until stiff peaks form.
  6. Grease a cookie sheet and sert aside.
  7. Gently fold crushed candies into beaten egg whites.
  8. Drop from a rounded teaspoon 1 1/2 inches apart.
  9. Bake at 325 ten minutes.
  10. Cool and then store in airtight container.
