Low-Fat Banana Bread

Ingredients:

  • 2 eggs
  • 2/3 cup sugar
  • 1/4 cup applesauce
  • 1/3 cup milk
  • 3/4 tbsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 325 degreese F.
  2. Spray a full sized bread pan with non-stick cooking spray.
  3. In a large bowl, beat eggs and sugar until light and fluffy, about 5 minutes.
  4. Beat in bananas, applesauce, milk, oil, and vanilla.
  5. In a separate bowl, sift together flour, baking powder, baking soda, and salt.
  6. Stir flour mixture into banana mixture, mixing just until blended.
  7. Pour batter into prepared pan. Do no full more then 1/2 full.
  8. Bake in preheated oven until golden and toothpick inserted into center of loaf comes out clean, about 1 hour.
  9. Turn bread out onto a wire rack and let cool.
