Ingredients:

Directions:

  1. Preheat oven to 425°F.
  2. Rinse potatoes under cold, running water (a colander works well for this); pat dry.
  3. Spray 9x13 baking dish with canola cooking spray.
  4. Arrange potatoes in a single layer in baking dish - make sure they don't touch!
  5. Pour milk over potatoes.
  6. Drop small pats of Smart Balance light butter spread evenly over potatoes.
  7. Sprinkle with salt (and pepper, if desired!).
  8. Cover baking dish with foil
  9. Bake for 25 minutes.
  10. Remove from oven and sprinkle cheese evenly over potatoes.
  11. Replace foil and return to oven for 5 more minutes.
