Lime Grilled Corn (Not for Sissies)

Ingredients:

Directions:

  1. Peel back husks. Scrub and rinse corn removing silk.
  2. Place in sink or large pot.
  3. Cover with water and soak 2-4 hours.
  4. Drain well.
  5. Peel back husks.
  6. Mix sea salt and lime peel (use mandolin or grater).
  7. Rub butter on corn.
  8. Sprinkle with lime salt.
  9. Dice jalapenos-seeds and all.
  10. Sprinkle each ear with jalapenos.
  11. Wrap up with husks.
  12. Secure husks with foil.
  13. Grill 12-15 minutes.
  14. Remove husks carefully.
  15. Mix chili powder and remaining butter.
  16. Add to corn.
  17. Squeeze lime juice, if desired.
