Ingredients:

  • 1/4 cup butter
  • 1/4 cup applesauce
  • 1 cup molasses
  • 2 tbsp baking soda
  • 3 cups flour
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp ground cloves
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 2 eggs

Directions:

  1. Blend brown sugar with butter and applesauce.
  2. Stir in molasses.
  3. Add baking soda to boiling water and stir into molasses mixture,
  4. (do this over the bowl so all the liquid goes into the cake mixture) Mix all well.
  5. In a seperate bowl, add flour, spices and salt. Stir well and add to cake mixture.
  6. Beat eggs well and add to this. Pour into a lightly greased 9x12 pan and bake at 350 for 30-45 minutes, depending on your oven.
  7. Excellent when covered in chocolate frosting!
