I love this recipe. It is even better with chocolate frosting. This is one of Laura Ingalls Wilders' actual recipes. I changed it a bit by lowering the fat. I replaced half of the butter with applesauce, so if you want, you can just double the butter and skip the applesauce altogether. Ingredients:
1 cup brown sugar |
1/4 cup butter |
1/4 cup applesauce |
1 cup molasses |
2 tablespoons baking soda |
1 cup boiling water |
3 cups flour |
1 teaspoon ginger |
1 teaspoon cinnamon |
1 teaspoon allspice |
1 teaspoon ground cloves |
1 teaspoon nutmeg |
1/2 teaspoon salt |
2 eggs |
Directions:
1. Blend brown sugar with butter and applesauce. 2. Stir in molasses. 3. Add baking soda to boiling water and stir into molasses mixture, 4. (do this over the bowl so all the liquid goes into the cake mixture) Mix all well. 5. In a seperate bowl, add flour, spices and salt. Stir well and add to cake mixture. 6. Beat eggs well and add to this. Pour into a lightly greased 9x12 pan and bake at 350 for 30-45 minutes, depending on your oven. 7. Excellent when covered in chocolate frosting! |
